It’s made with both green and purple cabbage because they bring slightly different textures and flavors to the bowl. Green cabbage is crisp and mild, and purple cabbage has a firmer bite with a slightly peppery flavor. The crispy chicken is more than just a topping here — its seasoned panko coating adds a golden crunch against the creamy cabbage, and using Greek yogurt helps the crumbs stick without setting up a full breading station. You can absolutely use frozen chicken tenders or your favorite veggie alternative instead, and either one will still turn this salad into a seriously satisfying meal.

For the Caesar Slaw

  • ¼ head green cabbage (about ½ lb / 8.5 oz.)
  • ¼ head purple cabbage (about ½ lb / 8.5 oz.)
  • 2 green onions
  • ½ cup Caesar dressing
  • 1 oz. Parmesan cheese, grated
  • ½ cup croutons

For the Crispy Chicken

  • 1 lb chicken tenders
  • ⅓ cup plain Greek yogurt
  • ¼ tsp salt
  • 3 Tbsp water
  • 1¾ cups panko breadcrumbs
  • ½ tsp onion powder
  • ½ tsp garlic powder
  • ¼ tsp salt
  • ⅛ tsp freshly cracked black pepper
  • 2 Tbsp neutral oil

Instructions

  1. Gather ingredients and preheat the oven to 400°F.
  2. Spread the panko breadcrumbs on a baking sheet and drizzle with the neutral oil. Toss to coat, then spread in an even layer. Toast in the preheated oven for 4–6 minutes, stirring once halfway through, until lightly golden. Watch closely so they don’t burn. Transfer to a shallow bowl or dish and stir in the onion powder, garlic powder, ¼ tsp salt, and black pepper.
  3. In a separate shallow bowl, whisk together the Greek yogurt, water, and ¼ tsp salt until smooth and loose enough to coat the chicken.
  4. Line the baking sheet with parchment or foil. Dip each chicken tender into the yogurt mixture, letting the excess drip off, then press firmly into the seasoned panko on both sides. Place on the prepared baking sheet.
  5. Bake for 18–22 minutes, flipping once halfway through, until the coating is golden and crisp and the internal temperature reaches 165°F. Remove smaller tenders as they finish if needed.
  6. While the chicken bakes, cut the green and purple cabbage into bite-sized pieces and slice the green onions. Add both to a large bowl.
  7. Pour the Caesar dressing over the cabbage and toss well to coat. Add the grated Parmesan and toss again.
  8. Top the slaw with the croutons and sliced crispy chicken tenders just before serving, or serve the chicken on the side.
